We Interviewed Roosevelt Pastry Chef Kareena Dennis about the Fall Menu
What inspired the Fall 2024 pastries menu?
Autumn is my favorite season, flavor-wise and weather-wise: All the warm spices, pumpkin, apple, the earthy, warm color palette.
I love it all and wait all year to create menus around it. Being from New England, Fall runs through my veins. We love it!
What flavors are you most excited about on the menu?
I love our Pecan Praline cookie and our Cinnamon Apple Kouigan Aman. I make the apple filling in house and it makes our pastry kitchen smell heavenly! It’s also served with our pumpkin loaf, the pair is unbeatable. The Pecan Praline cookie is also a creation of mine, it’s always fun as a Pastry Chef to create something from complete scratch and have it turn out as beautifully as those cookies. They’re the perfect combination of soft and chewy but packed with that toasted pecan flavor. They also look beautiful! If you order anything from this menu, you will not be disappointed. The flavors are on point and they give you that warm and cozy feel.
Which dish is the most challenging?
The poached pears inside the Poached Pear Cupcake. If they sit out for even a moment too long they oxidize on you! For me personally, it’s the candied bacon. I’ve been a vegetarian for most of my life so touching that stuff isn’t fun.
Can you talk a bit about how some of the items are unique to Louisiana ingredients? Unique to The Roosevelt?
We definitely offer that Louisiana praline flavor as well as some bourbon in our Maple Bacon Éclair. There’s also a bit of Sazerac in the Apple Tart Tatin’s caramel. We also offer our Roosevelt staple, the Red Velvet Cupcake.
